Japan's coffee culture developed its own distinctive character over the second half of the twentieth century, centred on the kissaten β traditional Japanese coffee shops where a single trained barista might spend ten minutes preparing a single cup of hand-drip coffee from freshly ground beans. This unhurried, technique-focused approach preceded the international specialty coffee movement by decades and produced many of the brewing tools now used worldwide by coffee professionals. The Hario V60 is the most internationally recognised product in this category β a conical ceramic or glass dripper with a single large hole and spiral ribs on the interior, designed to give maximum control over the flow rate of water through the coffee grounds. The V60 is a demanding brewer that rewards good technique: a slow, circular pour, freshly ground coffee at the right coarseness and water at 92 to 96 degrees Celsius produces a cup of clarity and complexity that espresso-based drinks rarely match. The ceramic version has a thermal mass that keeps the brewing temperature stable; the glass version allows the colour of the brew to be seen through the walls.
