Japanese graters are in a category of their own. The teeth are finer, more numerous and more precisely formed than you will find on most European or American equivalents, and the result is a texture of grated ingredient that is fundamentally different — smoother, more homogeneous and far less fibrous. This matters enormously when grating wasabi, which should produce a fine paste rather than rough shreds. It matters for ginger, where a fine grate releases maximum flavour. And it matters for daikon radish, the oroshi that accompanies tempura, grilled fish and numerous other Japanese dishes, where a watery, coarse result is simply not acceptable.
The selection here includes graters in several materials. Ceramic graters are gentle, non-reactive and ideal for wasabi and ginger. Stainless steel oroshigane graters with their characteristic shark-skin texture produce the finest possible result for wasabi root. Copper graters are traditional tools prized for their fine tooth structure and their ability to grate without bruising delicate ingredients. Bamboo-handled graters offer a more traditional aesthetic while still performing to a high standard.
Beyond the classic oroshigane style, the range also includes zesters for citrus work, box graters for cheese and harder vegetables, and combination grater-bowl sets that collect the grated output cleanly without mess. The fine teeth of a ceramic or copper grater can clog quickly with fibrous ginger or daikon, and a stiff brush used under running water clears the teeth in seconds without damaging them. Over time, proper cleaning of your grater is what maintains its performance, and this is one of those maintenance habits that pays dividends for years. Most of the graters in this collection are also dishwasher-safe, though hand washing is recommended for copper and uncoated ceramic models to preserve their surface quality.
