Kakigori
Kakigori is Japan's iconic shaved ice dessert, eaten at festivals, speciality shops and homes throughout the summer months. The dish is ancient, references to shaved ice appear in Japanese literature from the Heian period over a thousand years ago, but the modern kakigori experience, with its snow-like texture and creative flavour combinations, is a product of the twentieth century and the development of machines capable of shaving ice to an extraordinary fineness. The texture is what sets a great kakigori apart from ordinary crushed ice: finely shaved, it absorbs syrup evenly throughout rather than just on the surface, and melts on the tongue in a way that feels light and cooling rather than heavy.
Traditional flavours include strawberry, melon, blue Hawaii and matcha with condensed milk, but contemporary kakigori shops in Japan have elevated the dessert to something close to a culinary art form, with seasonal fruit syrups, homemade condensed milks and multi-layered flavour combinations. For home preparation, the simpler classic approaches are the most accessible and reliably delicious.

Manual hand-cranked machines are compact, quiet and fun to use, producing excellent fine-shaved ice with a little effort. Electric models are faster and better suited to making larger quantities. Both require a block of ice, formed in a mold that can be frozen at home in standard freezer space, rather than cubed or crushed ice. The ice block format is essential for achieving the correct snow-like texture.
