Whisks and muddlers in a Japanese kitchen context cover a broader range of uses than you might expect. The most iconic is the chasen, the handmade bamboo whisk used exclusively for preparing matcha. Split from a single piece of bamboo into dozens of fine tines, the chasen creates the frothy, well-incorporated texture that distinguishes properly prepared matcha from a simple green powder dissolved in water. No electric device or standard wire whisk can replicate this, the action and material are specific to the task.
The chasen in this collection is available in traditional 80-tine and 100-tine versions, the latter producing a finer foam. It should be stored on a whisk stand, also available here, which holds the tines in their correct curved position between uses and significantly extends the tool's lifespan. With proper care, a quality chasen should last six months to a year of regular use.
Beyond matcha preparation, the range includes stainless steel kitchen whisks for egg-based preparations, batter mixing and sauces. They are crafted from wood and stainless steel, and sized for comfortable use in the hand during the firm downward pressure required to extract maximum flavour from fresh ingredients.
