Iwachu
Iwachu is one of Japan's most respected makers of Nambu ironware, producing cast iron pieces in Morioka, Iwate Prefecture since 1902. The Nambu tekki tradition stretches back over four centuries in this region, and Iwachu is one of its most dedicated modern custodians. Their tetsubin kettles, frying pans, casseroles, takoyaki plates and rice cookers are made using traditional sand-casting methods in which each piece is individually cast, hand-finished and inspected before leaving the workshop. The result is a consistency and quality that factory production lines struggle to match.
What distinguishes Iwachu products from generic cast iron is the attention paid to both form and function in their design. The classic arare (hailstone) texture on the surface of their kettles is not merely decorative, it increases the surface area of the iron, which improves heat distribution and slightly speeds the time to boiling. The interior of their kettles is left uncoated, allowing the iron to react with water and release beneficial trace minerals over time, a characteristic prized in Japanese tea culture for its positive effect on flavour.
The range of Iwachu products available here includes several of their most popular lines. The yakitsuke kettles come in a variety of sizes and decorative patterns. The frying pans are pre-seasoned and ready to use immediately. The takoyaki pan produces perfect octopus balls at home with the same even heat distribution that makes restaurant-quality results possible.
